Mother’s Day in America is always the second Sunday in May. So you have a card and a present (I hope) for your mom, but wouldn’t she love it if you baked her a special Mother’s Day surprise to show her just how much she really means to you? Well now you can, with the delicious Mother’s Day Raspberry Zinger Cake! See below for the easy no-bake variant!
Ingredients:
• 1 box of Hostess Raspberry Zingers
• 1 cup fresh raspberries
• 1/4 cup granulated sugar
• 1 tablespoon lemon juice
• 1 cup heavy cream
• 1 teaspoon vanilla extract
• Fresh mint leaves for garnish
Instructions:
- Preheat your oven to 350°F (175°C). While it’s heating up, let’s prepare the raspberry sauce. In a saucepan over medium heat, combine the fresh raspberries, granulated sugar, and lemon juice. Let it simmer for about 5-7 minutes until the raspberries break down and the sauce thickens slightly. Set it aside to cool.
- Now, let’s work on our Hostess Raspberry Zingers. Take them out of the packaging and slice them horizontally into thirds. You’ll end up with three layers for each Zinger.
- In a mixing bowl, whip the heavy cream with the vanilla extract until stiff peaks form. This will be our luscious topping.
- Time to assemble our delightful treat! Take one layer of the Zinger and spread a dollop of whipped cream on it, followed by a spoonful of raspberry sauce. Repeat this process with the remaining layers, ending with a final dollop of whipped cream on top.
- Place your assembled Raspberry Zinger creation on a baking sheet and pop it into the preheated oven. Bake for about 8-10 minutes, just until the edges of the Zingers start to turn golden brown and the cream is slightly warmed.
- Once out of the oven, let it cool for a few minutes before garnishing with fresh mint leaves for a pop of color and flavor.
- Serve this delightful Raspberry Zinger creation to your mom on Mother’s Day, and watch her face light up with joy!
Here’s a fun and delicious NO-BAKE variant:
Raspberry Zinger Parfait. For a lighter option, instead of baking the assembled Zingers, layer them with whipped cream and raspberry sauce in parfait glasses. Top with fresh raspberries and mint leaves for an elegant presentation. Add a side of sherbert or ice cream to make it an extra delicious treat!
